Crispy Rhubarb Lemon Chicken Bake

This recipe is an easy one pan meal and the best part is that it's classified as a paleo meal! It is a tangy rhubarb marinade that caramelizes the chicken while baking. You can experience some extra sweetness with the added lemon slices on top. There's no doubt that it's super flavorful especially that it's topped off with crispy rhubarb shavings, which provides extra flavor and texture.

Rhubarb is classified as a vegetable but is sometimes mistaken as a fruit. It is sweet, savory, healthy, and has a pretty pink color.

The crispy rhubarb lemon chicken bake is naturally a paleo recipe. Every part of the rhubarb, except the leaves, are used in making this meal. The stalk is probably the most important part since it houses all the nourishment found in this pink vegetable. It is loaded with all sorts vitamins and minerals such as calcium, fiber, magnesium, manganese, potassium, protein, vitamin C, vitamin K, B vitamins, and many more. The best part is that it's also great for digestion!


For the chicken marinade:

  • ¼ cup creamy balsamic dressing or vinaigrette
  • 2 garlic cloves
  • ¼ cup tangy BBQ sauce (gluten-free)
  • 2-3 shaved/peeled rhubarb stalks (keep the shavings for the topping)
  • ½ tsp each salt and black pepper
  • 1 tbsp lemon juice
  • ¼ cup maple syrup

For the lemon chicken bake and crispy rhubarb:

  • 1.5 lbs skinless boneless chicken thighs
  • Olive oil (for pan and for the shavings)
  • 1 lemon
  • Salt/Pepper
  • Rhubarb stalks shavings
  • 1 cup pearled onions
  • ¼ tsp lemon garlic seasoning or lemon pepper (optional)
  • Thyme or tarragon leaves (to garnish)


  1. Preheat oven to 375F.
  2. Clean the rhubarb stalks and trim the ends.
  3. Use a vegetable peeler to gently peel off the rhubarb's red skin to create the shavings. Set shavings aside.
  4. Put 2-3 small stalks of the rhubarb in a blender together with the BBQ sauce, maple syrup, balsamic dressing, and seasoning. Blend it until a creamy texture is achieved.
  5. Clean and trim the chicken thighs then set aside.
  6. Add 1 tbsp of olive oil to a cast iron skillet or oven-safe skillet. If you don't have any, a Dutch oven will suffice.
  7. Add the chicken thighs and marinade to the pan. Squeeze a fresh lemon juice on top. Bring the marinade to a boil or until the edges start to caramelize on the pan. Reduce the heat and turn off completely.
  8. Flip over the chicken thighs and add lemon slices on top of each one.
  9. Add 1 cup of peeled pearled onions to the pan. Put a bit of olive oil on top of them. Use some salt/pepper to taste.
  10. Transfer to an oven at 375F for about 20 to 25 minutes.
  11. During the first 10 minutes of baking the chicken, season your rhubarb shavings. Just add in a bit of oil, salt, pepper, and some lemon pepper or lemon garlic if you desire.
  12. Place it on a greased baking sheet. Transfer the pan with the chicken thighs on it to an oven for the last 15 minutes of the baking time. Add the shavings halfway of the baking process to make them crispy. If you did thinner shavings, then they will cook faster.
  13. Once the shavings and chicken thighs are cooked and crispy, remove them from the oven.
  14. Serve the chicken thighs in a large plate. Add the remaining marinade from the pan on top of each chicken thigh. Top it off with crispy rhubarb shavings and serve it with pearl onions.
  15. Salt/Pepper to taste.
  16. Sprinkle some fresh thyme to garnish. You can also use any herb of your choice. Enjoy!

Important notes:

  • While the chicken is baking, you can also add any type of veggie into the mix. Just place it on another pan with olive oil. Broccolini is the best veggie to use for this one.
  • If your rhubarb shavings are thick, it will take time before they get crispy. Just check on them every 10 minutes. But if you shaved it thinly, then they will become crispy in just less than 15 minutes.
